Cheryl Bicknell and Kathy Huser's Dine-Around!

Eggs and honey from a neighbor’s coop and hives, salads from backyard and CSA harvests, Colorado meats from a local butcher, and an assortment of fresh from the oven baked wonders with seasonal fruit. This is the summer dinner fare prepared by co-hosts Cheryl Bicknell and Kathy Huser and enjoyed in Cheryl’s terraced backyard gardens.

Cheryl Bicknell is an architect with a passion for many things. She enjoys designing anything that might offer a new pallet to add to her repertoire including gardens, meals with friends, and buildings. Kathy Huser is formally trained in the culinary trades having been a personal chef for several years. The two come together to share stories of food, travel and gardening.

Under the umbrellas of the patio, your hosts will provide a meal fit for any locavore who identifies as an omnivore! Cheryl and Kathy will prepare beverages including Sage Lemonade and Mint Lavender Honey Water. Appetizers begin with warm Open Faced Omelets and a side of Chilled Tomato Soup and Pecan Cheese Wafers. Homemade whole wheat bread accompanies Fennel Kale Salad and Fresh Bean Vinaigrette. The main course will include Tarragon Garlic Roasted Chicken and Rosemary Fennel Braise Lamb with Ricotta-Fontina Stuffed Shells with Radicchio on the side. Tiny Fudge Brownie Cups with Pistachios, Colorado fresh fruit, coffee and tea will take you through to the end of the evening.

Guests at this event are asked to bring their favorite Colorado beverages to share either mixed with the infusions or to consume on their own.
